For me, an un-jailbroken iPhone is a crippled iPhone.

it depends, I recently jailbroke my 3.0 iPotch 1G, all the new stuff was great at first, but the speed and the general confusion of it all took its toll.
1 thing Apple really should consider is the SBS thing, swipe the status bar to get quick widgets

I guess this is my question as well... I'm really thinking about jailbreaking my iTouch 2G, and I've created multiple backups, but how do I apply a backup once it's jailbroken, so I can get all my data back.

If you're on 3.0 OS, just use redsn0w. It doesn't require restoring, it simply jailbreaks and adds the Cydia installer.

i just followed this guide (http://www.youtube.com/watch?v=qDDEN3zfQOg), and everything went fine, but when it was booting up, there was no pineapple and no cydia. :(

Jailbreak itself it pretty straightforward. Select firmware in redsn0w, plug in iPod and turn off.
DFU mode: 2 second hold home, 10 second both, release power and hold home for 30 seconds (or until it beeps into DFU).
Use the guide on iClarified instead. I tend not to trust video guides.

those are exactly the steps i did... maybe I need to restore it using the firmware i downloaded, and then try the jailbreak?

Weird, redsn0w isn't supposed to require a restore.
Did you check Icy as well when it asked what you wanted to install? Uncheck it if you plan on trying again, I don't think it's that useful.

should i just try to restore it with the downloaded firmware. then use the backup? how do i even use the backup?
edit: i just tried it again and i got to the pineapple, waiting to see if i have cydia

Backup is easy to use, just right click on your device name in iTunes and "restore from backup".
It can take a while though, so make sure you have time.
