Same here...my icon loads like that - it loads properly while viewing the app.

I've gotten this before. Sometimes when you've had it open for a while, and you're jumping between music and the store etc these start to appear, or at least they did for me. I was reorganising a ton of music, and trying to match the titles of my songs to the iTunes store so I could get the album artwork, and then after a bunch of switching back and forth all the pictures would start to disappear as you describe. A simple restart of iTunes fixed it for me, and I haven't seen it since their last update (although I also haven't done the same kind of switching back and forth).
