I unjailbroke my iPod touch yesterday because it was slow and laggy. But after I unjailbreaked, the battery percentage thing is still there when it shouldn't be. How do I get rid of this? because when I jailbreaked by ipod touch I had "battery percentage" enabled via SBSettings. So, how do I get rid of that battery percentage thing? Thanks.

Turn it off in your options.
There's a switch somewhere, labeled "battery life in percent" or something like this.

No. That's on the iPhone 3GS (not sure if its also on iPod touch 3rd gen.).
What you did is restoring from backup, that's where you went wrong. It's nothing big though (since its a hidden option in the OS).
To get it off (although I would keep it) restore from and set up as new, or re-re jailbreak and install sbsettings, launch it and turn it off.
This happens with emoji as well, if you dint turn them off before restoring they stay because it's just an exploit not an actual mod.

thanks for the help.
Is my warranty voided if it's there? Just in case if I need to send it to Apple?
Depends on who looks at your phone but they are pretty knowlagable about JB mods and exploits, so there might be a chance they tell you to restore and send it back or bring it in.
I had to replace a 3G S but didn't have time to restore. They were just about to replace it but he came back out and said "I would like to replace it but I found this" (he had swiped the status bar and sb settings dropped down) he said just put it back to normal & bring it back.
I did just that & it was replaced...had to replace that unit to but that's a different story.
Basically it's at your own risk but if I was a apple genius I'd tell you the samething, restore & bring it back if you want any maintanance on the device.
Cause I wasted a trip out there when I just couldve restored & waited to go out there. Chances are they'll know it's a 3G that has no "standard way" of showing battery percentage.

Oh ok, thanks for all the help again.
Also, are all the JB mods and folders still on my device even though I have unjrailbreaked it?

No. Only stuff like battery percentage, numeric wi-fi/signal bars, custom carrier text, emoji etc. You can get rid of this by setting up your device as a new device (as was mentioned). Or (if you have filesystem access) remove /var/mobile/Library/Preferences folder.
