Is it safe to put your ip on it? Also, how does it work? How do you get things into winscp so that you can get it on your ipod?

By putting your ip on it, do you mean typing it in to connect? You have to do that. It is safe though.

Anything that is on your computer will be on one side of WinSCP. The iPod's data will be on the other side. So you just need the files to be somewhere on your PC.
