What are the contact pics used for on the iTouch? I was hoping it would display their photo when you receive an email from them. Haven't seen those pics used. Anyone?

Your email idea is good, but at the moment the contact pictures are just they're for identification.

On the iPhone the pictures pop up when you get a call. They probably just didn't bother changing it.
