What you're asking for is not that hard. The only difficult thing about those videos is getting the art. If you already have the art there are plenty of programs to handle transitions well. The first one could be done in iMovie in minutes (if you have the art). To have avoid thumb shadows and crappy cam quality you should record the simulator on your mac. I use iShowUHD, but there are plenty of other alternatives.
