Galcon, Real Racing (Even though I haven't had it months, I can see myself playing it in the future), Stoneloops, Isotope, Sentinel 2, Tyrian, Blue Defense, Baseball Sluggers, Triazzle, Orbital, and more.
Of the many games I have bought, the only two I have kept playing regularly months after purchase are tetris and cyber chess.
While I'm pretty new to iGaming, I can definitely see myself keep playing Pinball Dreams. Any good pinball game has plenty of replayability, and PD is my favorite of all the ones I have on my Touch. I also can see myself coming back for more in Saucelifter. It's my favorite arcade style game right now and it can be plenty challenging depending on the difficulty level. The screenshots don't do it any justice.
The only ones I seem to keep coming back to on my metro rides every morning are G.I. Joyride, Scoops, and Moon Drop. Oh and sometimes Peggle.
minigores got me lots and lots of gameplay hours (10 or so) doodle jump has lots of replay value, but its only for like 3 or 4 minutes then you put it down, and pick it up the next day
Civilization Revolution, Monopoly, Flick Fishing, Galaxy On Fire, Guitar Rock Tour, Jurassic Rollercoaster, Secret of Monkey Island, Oregon Trail, The Sims 3, and Star Defense. Yeah I play a lot.
The ones I keep playing are defender chronicles, zenonia, doodle jump, gomi, alive 4ever, harbor master, and pirate bay.

A lot of people say that my game (Rogue Touch) has a ridiculously high replay value, based on reviews in the app store, my forums, and even Blake P. here at TouchArcade. Hell, I started programming it last fall, and even *I* still play it for fun after all this time! Randomness helps to keep it fresh...
Shameless self-promotion. I should give the game another try again. It's one of the games I thought would be pretty cool, but I sort of lost interest in... what with all those seventy-five or so other games which are screaming for some play time. I really need to slow down there.

I think Peggle is a great game with strong replay value. Same with Baseball Slugger. WordFu would be another one if you like spelling games.
The only one i still play all the time is The Creeps. I bought it the same day I got my iPod (13. February) and I still play it all the time
