Smuttleworks has only one game but it's simply great and they have a new one in dev that looks very fun as well, plus they really care about customers. That last part is specially true, they respond on here about any problems and strive to make a game the customers want. Crescent Moon, everything they make is awesome.

Illusion Labs. TouchGrind, Sway and iPint have had permanent homes on my iPhones since the beginning.
Rockstar Games. They currently have only GTA Chinatown wars but that is the only game which has a good story in the whole appstore.

Yes please) Half-Brick (no explanation needed) Andreas Illiger (Tiny Wings stole my life for a while) Mika Mobile (Things just "feel" right in their games) Mountain Sheep (Art is Rad, gameplay is rad, and you can't beat their name) Rovio (you know you love them too) I'm sure there are more I'm not thinking of, but those come to mind.
I'm one of those people that has a hard time just picking one of anything; plus I generally go by "You're only as good as your last game". It's a horrible stigma, but oh well. I do, however, want to give recognition to Chimera Software (Starbase Orion), Sunfish Studio (Galaxy Pirate Adventure), and ustwo (Whale Trail).
I second that, even good developers can make steaming piles of... Well, you know. So, currently: For Mage Gauntlet, Rocketcat. For Robo5, Yuguosoft. For Galaxy Pirate Adventure, Sunfish Studio. Actually, that said, I don't have favorite developers, rather favorite games.
I insta-buy everything from... Halfbrick, RocketCat, Crescent Moon I might have to give the nod to RocketCat since they are super indie and the Hook Champ series is my favorite series on the device. Mage Gauntlet looks to be an epic start to another great trilogy!
