As the title suggest, I've restored my iPhone 5S and set it up as a new phone (not restored to a previous backup) and it has between 700 and 800mb of OTHER on it. Why is this?

It shouldn't be software because the phone starts with 56gb available.

    Any/all help is appreciated. Thanks.

Apps like Facebook, Twitter, etc where you post/text/like/follow eventually rack up a lot of files and data, taking up some unneeded IOS space. For example, the FB app size is roughly 101 MB and I have 27 MB of other on it, likely from all my activity there. It's nice to regularly delete social media apps and reinstall, clearing the other.
As mentioned above, software itself takes up a lot.
