Can devs track if we've deleted their apps?

How common is this thing? I don't like the sound of it. Usually I let apps use my location because I assume it's needed for some of the features to function properly, but now I think I'll stop. It just gives any dumb kid with a dev license my name, age, gender and location? Does it want a detailed history of my sex life too?
