What multiplayer games can be played over the internet (NOT local wi-fi), where you can choose specifically who you want to play with? It doesn't matter what kind of game. I'm open to ALL suggestions. So it could be a racing game, or a drawing/Pictionary game like Charadium (which I know does support internet-play with chosen friends via Plus+), or even a turn-based game like Chess With Friends (which I know also supports internet-play with chosen friends, via entires in your Address Book). Wow... NO-ONE knows of any multiplayer games? I find that impossible to believe, so I'm gonna for the other option of no-one could be bothered to type out and share a little bit of helpful information. Really? Gee thanks guys...

There has been a Tetris Clone which had this feature aswell, but this game has been banned from the App Store.

Depict uses OpenFeint to deliver a pretty close approximation to an Xbox Live interaction with friends. You see when they come online, you can add friends within the game, and you can invite people to play offline and online. Plus, you know... it's fun. And free. You can't really go wrong.
