Umm how do I get 3 stars on most of the levels? There are always some coins behind the final key, and no jump sequences... for example the 2nd level.

Don't try to get all coins, but instead get the biggest point's coins as possible.
For the 2nd level: •••Spoiler:  Instead of going on the right route, go to the left one and grab the big money bag! Use the jump to reverse direction.
