Check out iExplorer - allows you to access the files directly in the device, save them to your computer, and then load them back onto a device. And it's free!

No, but 99% of the time, save files are stored in either the Documents folder or the Library folder (most often Documents). Just copy both folders and you should be fine.

I can't believe my last post here was a year ago. So that's it? LucasArts are leaving this one as it is, without retina graphics and the much improved iPad control scheme? Sad. They could definitely breathe life into this if it were updated.
