We need some testers via testflight please

To answer your questions.
You should be spawning with 2 balloons. Are you seeing one sometimes on respawn? We can fix that easily.

The bunnies can attack and the ai get "smarter" as you progress. So if you only played the first few worlds they aren't as effective there. So yes the rabbits can and do pop your balloons. The question is do you think we should make the more aggressive? That's also an easy fix since we just have to tell them to be more aggressive. What do you think?

I can't reliably recreate it, but I do feel like there were one or two times where I spawned with only one balloon. I think one of them was the time I got eaten by the shark, though again I can't confirm that.

You might make the bunnies just a bit more aggressive earlier on. I don't want to see them pulling out knives and stalking me or anything, but if they don't feel like they are even trying that's no fun either.
