I see a big poker chip with a + sign next to it in the 4th screenshot. Definitely looks like a premium currency, but I would love to be proved wrong.

That definitely is IAP, but i hope that's a "get more" for the impatient, and not a secondary premium only currency.

I mean, it's poker... So it's not like you can IAP your way into getting more royal flushes right? Is it?

Right. The IAPs give you chips which you can use for healing potions and to add charges to your amulets (fun magical artifacts you'll earn gain at the end of each stage that can help tweak things in your favor).
