unfortunately you are right when you restore from backup the whole ipad will go back to that date.

I do a backup already from itunes, but my saved game is still not there???
I deleted the game on my Ipad, go to itunes and clicked by Fairway Solitaire!

Deleting and reinstalling won't work.
From Itunes you need to select the option to restore a backup you made from your iDevice.
It will affect your whole iPad btw so make sure that before you do this to copy your new documents/pictures to your desktop.
