Yeah to do the taunt you do a reverse pinch move (part your fingers) and it fill your special bar a little.
When that bar is full you then do your special by a swipe in any direction from a grapple.

About the swipe/buttons I prefer the swipe controls, the buttons make it a lot easier to do an exact move everytime but for me the swipe controls work better on iOS and leave the screen free of buttons.

There are special/finishers you can do with zig zag swipes but I've never been able to do them successfully everytime.
I've tried asking people for a picture diagram or something to show the swipe actin that's needed but had no success.
