I once had a game called trauma centre for the Wii which was actually quite addictive, and was wondering if there is a port for the iPad or something similar?

No Port yet but you should take a look at Amateur Surgeon & Amateur Surgeon 2.

I looked at those and they look exactly what I was wanting!
Now I must wait a month for the iPad
