The main ones that I really like:

Solomon's Keep (favorite dual stick action RPG)
Solomon's Boneyard (let's me experiment with skills for the Solomon's series)
Mushihimesama Bug Panic (ruined all the dual stick shooters that came afterwards for me)
Infinity Blade 2 (replace the first one. Love the grind for some reason)
    Super Crossfire
    Gridrunner
    PewPew 2
    Frogatto
    Mikey Shorts
    Deathsmiles
    Street Fighter IV Volt
    Ascension

There's more that stayed on mine for a long time, but the above are most of my favorites.

Read my signature + many more. I'm having trouble with the space on the phone (even if it's a 32gb one) because I want to keep all the awesome games on the device.

Apple must lose a lot from their cut of game sales due to making space such a premium. Mind you they're making enough not to care. I do know it has made me not buy some games I would have otherwise, I guess it effects devs more so.

I keep games that are amazingly good, like 11/10 scale, even if it has a big file size, even of I have finished the game 12 times:

    World of goo
    Grooh
    Tractor trails
    Joining hands
    Wriggle
    Juice belts
    Twingo
    Save the puppies
    Bag it
    Zen puzzle garden
    Iblast moki 2
    Colorbind
    Home sheep home 1 & 2
    Beyond ynth
    Max and the magic marker
    Chute
    [/b]

I also keep games that are pretty good 7/10 and above, if it has a small filesize
    Book boom
    Tape it
    Triple town
    Billy the painter
    Happy stretch
    Light the flower

I keep games that are 7/10 and above if they regularly get updated with new content or I'm waiting for that update they promised (or hope for)
    where's my water
    where's my perry
    penguin patrol
    dragonvale
    Junk jack
    Minecraft
    Paper monsters
    Chop chop caveman

I always keep games with an interesting or unique concept, even if I do not necessarily enjoy the game anymore or wouldn't replay the game as its not one with replay ability, and just keep as something pretty incase I need to demonstrate my iPad to someone (grandparents, or to keep kids entertained, etc)
    Sploosh
    Sprinkle
    Shark dash
    Droopy blocks
    Tree of life
    Contre jour
    Feed me oil
    Eboy fixpix
    Blendamaze

I also keep games I atleast moderately like which have been removed from the AppStore and are not backed up on the computer
    Imame
    Vikings slice
    Caseys contraptions
    Critter crunch
    Tiny Tim

I also tend to keep games which intrigue my cats..sometimes I just leave my iPad on the floor and let my cats play
    Game for cats
    Paint for cats

I keep games that offer alot of replay ability even if I've played the crap out of them and unlocked everything:
    super monsters ate my condo
    veggie samurai
    Bumpy road
    Subway surfers
    Slam dunk king
    Plic plic
    Rayman run
    Bee leader

Oldskool classics that I played as a child are basically undeletable
    Sonic series
    goldenaxe

Kairosoft titles- they are small files, they are fun, they are like freemiums with no IAP, they are more like a collection, or a library, they are undeletable.
    Oh edo towns
    Cafeteria Nippon
    Pocket academy
    Mega mall story
    Game dev story
    Venture towns
    Hot springs story

I also kep games that I atleast moderately enjoyed and have completed some of, and refuse to delete because I don't want to lose my orogress or hope to finish the game someday (3 star every level or otherwise)
    Jump out
    Sheepernova
    Critter chaos
    Bobby carrot
    Rope rescue
    Farm break
    Qvoid
    Hairyballs
    Beans quest
    Islash
    (the list is basically endless)

Word games- word games offer endless replayability, and some have so many updates, always good to keep around for long car rides, trains and whatnot since they don't make you motion sick
    7 little words
    Frankenword
    Bookworm
    Wordsworth
    Super text twist

Social Games to play against friends or family or randoms
    Charadium 2
    Song pop
    Smarter than a 5th grader
    Words with friends
    Hanging with friends

I will not keep a game with a filesize above 100mbs installed no matter how good it is.

I will often first delete a game I got for free, over deleting a paid game

I often force myself to finish a game I don't really enjoy much, but enjoyed somewhat, so I can delete it and forget about it

I don't sync my iPad with my computer so MANY games don't make the cut, even expensive paid games, though I have made a long list of most of them, and add each game I delete to the lost after deleting so if I efer fo free up some space, I could go back and try to games (it never actually happens though)
Many paid games with big file sizes didn't make the cut past a week. (aquaria, bad piggies, grand theft auto, hecter series, band together, 7th guest, tiny bang story and various other point & clicks especially by bigfish games etc)

May be a cliched list and included not necessarily because they are the funnest games, but as titles that in some way each bought something new to the table these are some of the permanent residents on my iDevices...

    Osmos - Innovative and atmosphere+
Canabalt - Set the mold for all the 3d versions that followed.
Angry Birds - though the merch is completely outa control there's no denying it was the right game at the right time.
Doodle Jump - ah remember when the accelerometer was new
Paper Toss - First to really use Swipe and extra points for being the most intuitive game imaginable.
    Fruit Ninja - Still T20
Words with Friends - we're still waiting for more think-worthy multiplayer titles.
Super Hexagon - incredible amount of game packed into 5-10 seconds
ZenBound - nothing like it before or since.
More Cupcakes - Not for me and many would debate it's gameness BUT it catered to a massively underserved audience (young kids and females) and started a whole genre - so much respect!

+1 for 'Cool Pizza' for being so completely out there. Definately check it out, it's free.

Super hexagon is not 5-10 sec of fun! I routinely get 60+ second on hard. But ya, it's very fun.

Superb Asphalt 7: Heat by Gameloft. Top modern Universal-App.

    https://itunes.apple.com/app/asphalt-7-heat/id462694916?mt=8

Best game in town. With fantastic local multiplayer, an experience which is not possible with classic consoles (with a retina windshield/driving wheel combination just in front of your nose, not ONE cable). Best supercars. Prettiest tracks. Perfect controls. Excellent gameplay, graphics and sounds. Solid 60 fps. Optimized for iPhone 5 and iPod touch (5th gen.).

No need to buy the IAPs, you can unlock all cars and tracks in career mode without grinding. Only $.99. A steal!

    Infinity Blade 2

I like my games heavy on action and these take the cake. I'm waiting for Infinity Blade Dungeons to come out.

    Runner Ups:
    Gems w/Friends
    Tiny Tower
    Shadow Guardian
    Modern Combat 2
Dead Trigger (would be up there if it didnt always crash)
    Farkle Addict
