Enviro-Bear 2010 is the ultimate game, and I mean ultimate. Hundreds of people are hailing it as the superior game of all... it's a big cult thing. My favorite iPhone game ever is Spider: Secret of Bryce Manor. It's 3 bucks but you get a great and well developed story, neat art, fun gameplay and a well done soundtrack. Also look at: Eliss, Zen Bound, Canabalt, Edge, Jet Car Stunts, Grand Theft Auto and Gloop.
