I agree with the baseball and basketball games. The app store is really short on those. I would like to see: Mario games(probably never going to happen) more ATV racers. (like Pure)
A very complex and non-linear RPG, like ones found on PS2/3 and maybe Wii, especially the Japanese ones. Also I'd love to play Tenchu 4 and Zero 4 on the iPhone.

A sandbox game with a first person view and world detail to the standard of Morrowind & Deus Ex but with graphics polished to the current standard. The setting would be something styled after Interzone - featured Naked Lunch by William S. Burroughs - so something like a mix between the Tangiers, slightly futuristic (cyberpunk), and heavily based in the surreal (subtle shifting appearances, heat waves, etc.). The storyline should follow a noir narrative with mission design mixed from GTA, Deus Ex, and Morrowind - so a large variety of highly polished missions featuring multiple paths through each mission and environment. Unflinching in its use of absurdities, abstracts, apathy, sarcasm, cynicism, and dark humour.
