To kick-start the discussion: Extreme-G I can't begin to describe the amount of fun this game provided... loops, twists, turns, it was all a sheer blast to play Re-volt Yes, the one with the RC-cars and powerups. Stratosphere: Conquest of the Skies I don't think that would be something to port but something to use as an inspiration. It's a pretty old game and I don't think there has been anything like it since then on any platform. For simplicity and battery life it would be possible to implement a game like that with 2D top down graphics instead of the 3D graphics the original used.
I'd SO LOVE to see the original Max Payne ported! That was an amazing game, and i'm sure the iphone can handle it with a bit of a downgrade in graphics (and the 3Gs with an UPGRADE of graphics xD)

I want Capcom to port the rest of the Phoenix Wright games. A port of Castlevania (NES) by Konami would also be much apprechiated. It´s such a sweet little game, it brings back childhood memories. Besides, the original Castlevania really rocked.

Does someone remember "Blackthorne" by Blizzard? http://en.wikipedia.org/wiki/Blackthorne It does share similarities with Flashback, but still has it´s very own unique setting. Such a great little game, i deeply loved playing this. I think they should port it. Come on, Blizzard.
Seeing as we haven't seen a decent SRPG on the appstore yet (hopefully War of Eustrath will go some ways to fixing that), I think Fire Emblem would be great on the iDevice. The touch controls would be perfect and actually have an advantage over the usual d-pad controls. Perhaps an upgrade in the resolution would be needed too.
Glider (Old Mac game, tons of fun), Bugdom (NOT BUGDOM TWO THAT GAME SUCKED) I would buy both at 5$ in a heartbeat.
While I would LOVE Fire Emblem on the iDevice sadly it's impossible as it's a first party Nintendo game
Err I'd like Cave Story though I think the game dev shit the idea down and I'd like to see Ninjatown for DS that TD was awesome
