I would say start with: Spelltower New World Colony Scrabble Words with Friends HD Cut the Rope HD Great Little War Game Some of these have demo's too. These are all good games that should help show you the ropes on the iPad, without being too hard to control. Hope this helps!

They're the definition of non-gamers. Funny thing is, my mom could probably finish every single level in Angry Birds HD now before I can finish the first world. No joke. Hope this helps.
I just introduced my 4 year old to "let's create Pottery". I would think it would be applicable to a senior as well. No timers, no fast reflexes required, no stress. Just spinning, firing and decorating clay.
They might like a Solitaire game. (Eric Snider's Solitaire is a good one...) Maybe some board games like Backgammon. And senior citizens always seem to like slot machines!
My parents are 65, and they both love and are addicted to 1. Angry Birds 2. Tetris (the original EA one) 3. Superstickman golf (they don't use those power shots though.)
I think they might enjoy some hidden object games, too. I don't really think that they need "easy" games to learn how to use the iPad. It's the most intuitive device I own. They'll probably do a lot better than you might expect.
If you want something very basic just to let them get used to the touchscreen etc, those irritating talking animal apps eg Talking Tom Cat are massively popular with almost everyone who's seen them on my iPad, people who aren't very computer literate seem to be most amused by them.

Funny story, this past Christmas my grandparents, who are in their 90's (my grandpa will be 100 this year), asked me to show them what was so special about the ipad. I figured I'd show them Angry Birds so I played a few rounds while they watched, then I handed it over and told them to try and that's when my cynical grandma muses aloud "oh, well I guess small things amuse small minds...". I came back about an hour later and they were still sitting there glued to the ipad having a great time. Admittedly, they weren't doing well, a lot of slinging the birds backwards and all but I think it really speaks to the magic of these devices we take for granted. I would also put in a vote for spelltower and let's create, pottery, amazing games especially on the ipad. Others suggestions to consider: Quell, Zen Bound 2, Osmos, and shredder chess.
Angry Birds Fruit Ninja World of Goo Cut the Rope Tiny Wings Flight Control Whale Trail All great simple games, with very straight forward and easy to understand mechanics.
Cut the Rope is one of the easier puzzle games, but it requires some reflex during the later levels. Also, Where's My Water?, Bejeweled, and Cover Orange.

My parents are in their 70s and their fav games are Fairway Solitaire and faraway solitaire blast. My mum loves cover orange. My mum also uses Pinterest App like crazy - my Dad reads the Age for iPad - I also put on for them plants vs zombies, candy crush and several hidden object games - i also like Zynga Poker - my mum also likes several brain games and ur no1 game is 'Slots - Pharaoh's Way' She surrrre loves that game!
