This game looks awesome! I might just have to get it today. The explosions are sweet! They really give a sense of satisfaction that should come from blowing something up

I can vouch for that.. while developing, I was usually adding a feature or fixing a bug.. and then spending those 10-20 minutes testing the explosions again ;)

Where is flip screen? And is there a tilt sensitivity option?

The screen will flip automatically.. as long as the device is kept for a second vertically enough.

The sensitivity is in the Options screen accessible from the More... button in the main screen.
