I see the description says 64 "races", which is presumably the career mode, but how many different tracks are there?

Yes, that means career mode.

8 different tracks with clockwise and anticlockwise on each track. Each of those tracks also have day and night settings. Tracks can also have different elements added to mix things up a bit.
