In case this wasn't posted before, here's some pertinent info on how syncing is done through iCloud from NimbleTim. The circumstance was I lost a part after a trade while I had two devices running Pocket Planes.

If you are not seeing them there is a good chance that they were lost in an iCloud sync. iCloud will always choose the game with the most XP so if you received the parts on device A but it didn't sync completely and then earned XP on device b then parts can get lost in the sync.
