am I missing something or is there a real reason why it seems like more and more apps first become available in NZ?

Its always been like that, in New Zealand right now its 12am so the new games are out, when its 12am in the UK these will appear.

I 'presume' devs set their apps to launch on say a Wednesday so they appear the second it hits 12am, obviously with timezones some of us have to wait which is a pain !
