I'm going to jailbreak my new iPod Touch 3G soon so I can get a Metal Gear Solid theme and ScummVM to play MI2 on it, but I was curious about one thing first. I've made some real progress in some of the games I have, and whenever I jailbroke my old iPod it ended up restoring everything. I was curious if there was any more secure ways to back up saved data on my iPod rather than using iTune's backup feature. Last time I did that I only had a few apps on there and like half of my progress gone and there's nothing that makes me stop playing games more than having to replay parts of games that I've beaten. Any help would be appreciated.
Once your jailbroken, download "AppBackUp" from cydia. That will backup all your games save data, which you can then SSH out the data to your computer and keep the files if you ever need to restore any of the games. Which allows you to delete any game syou want and if you ever re-install them, you can put your progress back on.

Yeah just blackra1n it, you don't need to restore or anything. Then download appbackup if you still need it for anything else.
