It's a game where you have free roam of the environment. And in most of the games I listed, you do. They each have their own style. Some games don't have the option until you beat the game, but still. All games have their restrictions and all people have their preferences.
Then please do define an open world game for me. 99% of the time it means you have free access to roam your environment without limitations of loading or levels or that sort of thing. You have the ability to travel the interface and interact with your environment as you wish. While Final Fantasy and the FPS games aren't the best example, they still give you the ability to roam and interact with what you choose (given that FF will throw you into random battles outside safe roaming areas). And no, "open world" doesn't have to mean high quality or 3D graphics to create a realistic environment that gives a great impression of "free-roam". Before the idea was even introduced to newer consoles, the Final Fantasy games were considered expansive because of the freedom you have rather than a strictly linear game like Super Mario Bros. Of course even it upgraded when the 64 came out. Obviously you guys have a flat perspective of what an open-world game should be.
An open world game is a game where there is a massive world, and you can roam free around it. No matchmaking, lobbies, servers, levels, ect. No loading screens, no change of screens, (except for entering houses), ect. I've only seen videos of the gameplay which is why I suggested it, but now I may decide against buying it. However, in their next update they're adding multiplayer and pvp, which I assume will (hopefully) allow roaming of the gorgeous environments.
Why would you assume that? Multiplayer will play the same now except no moving around, you'll probably match up with someone and either randomly pick where to fight or vote or something and then you battle there, then it's over.
All of Gameloft's games are primarily linear, with a tightly set path despite the appearance of freedom. And your only way to complete each objective is to follow this well defined path. And "vast open area" implies more than the pathway you get in Infinity Blade. None of the games you listed come close to achieving these points.
