psx4all has big problems on iOS 5, probably has less problems on iOS 4 if you can get hold of v3 rather than v4 but its not in brilliant shape. Wait for zodttd to update it.
SNES, NES, MD, GBC, GBA all work great. plenty of emus for the first 4, I would recommend using the .emu emulators by robert broglia (ive tried a few, i like those ones the best) but with gba your only choice is gpsphone, which worked fine on my 3gs and fine now on my 4s, but the main interface and available options are limited compared to .emu ones. But it works so I'm not complaining.
Also n64iphone is supposed to be getting an update soon for iOS 5 as well, would love to see how ipad 2/iphone 4s handles that

Can someone please explain this paragraph regarding jailbreak+unlock for 4S? I don't really get it:

We can’t emphasize more on the fact for iPhone 4S users who are willing to unlock their devices on iOS 5. It’s a safe bet that you do not update to iOS 5.0.1 in any case as the unlock tool in development will not be compatible with iOS 5.0.1 upon release, hence stay on iOS 5 if possible since the original release of iOS 5 which was pushed out in October is not being signed by Apple anymore, therefore you cannot downgrade your iPhone 4S to iOS 5.0.1 along with your sacrificed baseband.

I just got a 4S today, it already came with 5.0.1. So I use Absinthe for jailbreak, and what do I use for unlock? Is there even a 5.0.1 unlock or is it already too late since mine is no longer iOS5.0?

There's no unlock for 4s. Basically says if one is ever created most likely it would only work for 5.0

There is no JB yet for 5.1 so if you update, it will become a standard idevice on 5.1 rather than jailbroken.
you any apps from cydia but its possible if you really want to. Havnt heard anyone say baseband was updated so as far as unlock goes, probably the same boat as everyone on 5.0.1, but if an unlock comes out, you cant use it as you have no access to cydia.

Saying that dev team just released a new redsnow that does tethered jailbreak on 5.1 for devices that are not a5. You can use it to create a custom IPSW so that you dont upgrade your baseband.

EDIT - realised you have an iphone 4s as your device, so this news means nothing. once useful bit of information that I got from the site regarding 4s, you cannot downgrade it at the moment. once you go up, you cannot go back down like pre ipad2 devices can.
