What games on the App Store do you think has the best realistic graphics?

I don't think I've seen any to be honest, there's some pretty good technical examples but as far as realism goes I'd be struggling to think of any.

How about games mage using Unreal Engine 3 such as Infinity Blade etc

It's not the best, but up there.

Dead Trigger

And Dead Trigger 2 will probably be close to one of the best on release.

Normally wouldn't post this, but since I am the President of the Dead Trigger Defense Squad, and it is free, kinda have to.

BioShock has absolutely beautiful graphics, but they're stylized and suit the game world oh so well. Borderlands is another good example of this.
