The last post looks best to me, but I'm confused. It seems like the target tap area for each of the tabs is the blue button on the right?

Why not just make those icons and have the whole tab tappable?

Because you can't have headers as (or at least look like) buttons, that's unheard of. I can however increase the tap target of the buttons to the whole header area, but the tap will look like it only affected the icon button.

If the general consensus is that the new UI is perfect, or as close as a newbie developer like myself can get to perfect, I will turn my full attention to the backend of the app. Any suggestions there? Should I explain in depth the workings of the app?

I know that, but I question is the need for a 'button' on the header at all.

It keeps the theme uniform. I don't have anything other than buttony looking buttons do anything in the app. I never have headers themselves do anything other than provide contrast.
