I'm sure you don't need to have every single game with you 24/7. You could easily halve that and just swap them out from time to time.

I was the same ;) But trying to shave off a few apps to fit one more in really started to annoy me. Now I limit myself to 100 games, the latest and greatest, the rest can nestle in iTunes until they're called upon.

I do use folders though, so if I needed to break the limit in emergencies I could... I keep the 100 games in my games folder, and all the new stuff I'm trying out go on the second page of the default springboard. If they're good they're promoted to the folder, if they're not... they go!

Can you remove stock apps off a non jailbroken iPod touch? I never use the Contacts or Stocks apps. I would love to have more icon space for games by deleting those if possible.

I hid both Contacts and Stocks when I was jailbroken. :p Make a backup of that and restore from backup after you've restored your iPhone with iTunes.

Is there any way of erasing the stock apps without jailbraking?

You could try throwing your iPod at a brick wall as hard as possible, that'd probably remove all the stock apps from your screen permanently.
