Endless mode?.... too bad I uninstalled this after I finished it... How do you unlock it?

Each level that is playable in Endless Mode (14 of them) can be unlocked by completing the level in regular game play.

Re: Leaderboards = not planned for Game Center but we are working on ideas for Acheivements and Unlocks (along with iPhone5 support) for the next update.
